Gastronomy

Ibiza and Formentera have more than 2,300 restaurants, cafeterias and bars, a figure that illustrates our tremendous range of gastronomic offerings. The old Pitiusan cooking based on wheat, olive oil and wine has been enriched with various fish and meat dishes, in addition to varieties of legumes, vegetables, fruit and other garden produce that are grown on the island.

Highlights include plates like the ‘bollit’ and ‘guisat’ (fish stews), the ‘sofrito payés’ (meat and sausage stew), the ‘arroz de matanzas’ and the ‘frito de pulpo’, along with desserts like ‘flaó’, ‘greixonera’ and ‘orelletes’.

In the daytime, the beach stalls offer good rice and fish dishes. At night you will have a hard time choosing from an infinite variety of dishes featuring Spanish or international cuisine.

Summer and winter

Ibiza's gastronomic dishes are distinguished by Winter and Summer specialties. The meals in the country and the ancestral pig slaughtering ceremony are common between November and February. In the hottest months, the island transforms to become a rich showcase of national and international cuisine for all tastes.

Pork and wine. They are the two emblematic elements of Ibiza's traditional cuisine, which achieves its maximum splendour in Winter. The Mallorcan sausages (sobrasada and botifarró) are extracted from pork, a real delight when grilled over the coals and accompanied with homemade “payés” bread. The wine festival is celebrated in San Mateo every year where different wine producers compete to determine who scores the highest evaluation for their prized harvests.

Sea and land

Ibiza's cuisine masterfully combines fish such as the acclaimed 'raor' or shellfish such as lobster with deliciously stewed Grouper or Squid, all prepared with rice or the freshest products from the market. The “sofrito payés” (with grilled onions, garlic, tomato, etc) is the most popular meat dish.

Ibiza's countryside offers a rich variety of fruits and vegetables which can be purchased in its markets. Its figs are a delightful treat. Its traditional desserts are prepared in country houses. We highlight the “flaó” (with goat cheese) the traditional pastries such as “buñuelos”, “rosquillas”, and 'orelletes' or the San Juan cake. Try Ibiza's honey or any of legumes grown on the island.
